Al Dente Pasta is made just outside Ann Arbor, Michigan. It cooks to perfection in just under 3 minutes.  When paired with Artichoke Pasta sauce from the Robert Rothchild Farms in Ohio it is gift basket mainstay.  Also available at the Handmade Market is Manicaretti pasta from Italy.  It is made from Durham semolina wheat and after it is cut into shapes, it is air-dried in temperature-controlled chambers for 56 hours.  This gives it a nutty flavor and firm texture and 10-12 minute cook time.   It is full bodied enough to enjoy alone with only EVOO, chunks of garden fresh tomatoes, and a sprinkle of Parmesan.
